This Digital Graffiti Wall from Canadian-based Tangible Interaction provides stencils which is a neat idea. They were commissioned to produce one for the 2010 Olympic Winter Village. It’s written in C++ using openFrameworks, a framework library for creative experimentation (maybe a little like processing?).

On the Talk Talk site users generate their own light-writing art at home using a web camera. The best are used for X-factor ad idents. Light-writing is cool and you can try out the app for yourself but I think the best results are when you do it for real. All you need is a digital camera with long exposure and the CHDK unlocks this feature in most Canons. And some lights.

WiiSpray by Bauhaus University student Martin Lihs uses a hacked Wii Remote in a spray can and a flash app running on an ibook (possibly using darwiin-remote) to let you spray virtual graffiti.

Sounds like there were plans to make this into a real controller but, as SlashGear point out, it would be more cost effective to make a spray can holder for a Wii remote.(Original lead from kwarme.)
